Definitions:

Lacto-ovo Vegetarians
People who do not eat fish, shellfish, poultry or meat of any kind but who do eat eggs and dairy products.

Lacto vegetarians
People who do not eat fish, poultry or meat products -- and who do not eat eggs -- but who do consume dairy products.

Ovo vegetarians
People who eat no fish, poultry, meat or dairy products but who do eat eggs.

Vegans
People who eat no fish, poultry, meat or dairy products and who do not eat any processed foods containing these ingredients.

WOODSTOCK FARMERS MARKET MENU

Visit this page regularly. From time to time we'll share a recipe that we have tested in our cafe. In honor of cold winter nights and a lotta snow, we offer you this Veggie Chili:

Veggie Chili
2 TB. garlic, minced
1 large yellow onion, 1 in. dice
1 green pepper, 1 in. dice
1 Poblano pepper, minced
1 lg. (32 oZ.) can Brooks Hot Chili Beans
2 16 oz. cans Dark Red Kidney Beans
Matboukha (Leslie's Moroccan Salsa)
1 6 oz. can tomato paste
1 tsp. salt
1 tsp. cumin
1 tsp. chili pepper
1 tsp. Szeged Hot Paprika
1/4-1/2 cup extra virgin olive oil

Saute garlic in olive oil to cover the bottom of the pan about 1/8-1/4 in. deep. Add onion and peppers and saute until soft. Add Chili Beans and 2 cans of kidney beans with their juices to pot. Fill emptied Brooks Chili Hot Beans can with Matboukha (Moroccan salsa) and stir into mixture in pot. Blend in the 6 oz. can of tomato paste. Bring to a simmer. Eat and enjoy! - You may want to add cheese and/or diced onions to the top of the chili.
