- Falafel (luscious deep fried bean balls dropped into pita pockets on a bed of hummus, topped with a chopped middle eastern salad and tahina dressing)

- Pita burritas (an omelet filled with sauteed peppers & onions, Moroccan salsa & cheese, dropped into a pita pocket - can be hot if you like it that way!)

Visit this page regularly. From time to time we'll share a recipe that we have tested in our cafe. In honor of cold winter nights and a lotta snow, we offer you this Veggie Chili:
Veggie Chili2 TB. garlic, minced
1 large yellow onion, 1 in. dice
1 green pepper, 1 in. dice
1 Poblano pepper, minced
1 lg. (32 oZ.) can Brooks Hot Chili Beans
2 16 oz. cans Dark Red Kidney Beans
Matboukha (Leslie's Moroccan Salsa)
1 6 oz. can tomato paste
1 tsp. salt
1 tsp. cumin
1 tsp. chili pepper
1 tsp. Szeged Hot Paprika
1/4-1/2 cup extra virgin olive oil
Saute garlic in olive oil to cover the bottom of the pan about 1/8-1/4 in. deep. Add onion and peppers and saute until soft. Add Chili Beans and 2 cans of kidney beans with their juices to pot. Fill emptied Brooks Chili Hot Beans can with Matboukha (Moroccan salsa) and stir into mixture in pot. Blend in the 6 oz. can of tomato paste. Bring to a simmer. Eat and enjoy! - You may want to add cheese and/or diced onions to the top of the chili.
